Lemon-Lavender Cookies

I finally got off my butt this Friday and woke up early to make cookies for my workshop class. This fun cookie recipe is from the Better Homes and Gardens 100 Best Cookies issue. I was really excited about making this recipe because I have never tried to make anything with lavender. Also, it is a really simple recipe, the ingredients for which I already had laying around the house in my baking cupboard. They turned out pretty lovely and I even had some purple sugar sprinkles here so I put a touch of those on the top. I have this theory that perhaps I do not need to refrigerate them for 2 hours, so next time I’m going to try to just make them right away and see how it works.

Lemon-Lavender Cookies
For the cookies:
1 teaspoon dried lavender buds
1 1/2 cups flour
1 teaspoon finely shredded lemon peel
1/4 teaspoon salt
3/4 cup butter, softened
1 cup powdered sugar

for the Frosting:
1/4 cup butter, softened
1 cup powdered sugar
1 tablespoon milk

1. Using a mortar and pestle, grind the lavender.
2. In a medium bowl, combine flour, lavender, lemon peel, and salt. Set aside.
3. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.
4. Add powdered sugar and beat until combined. Beat in as much of the flour mixtureas you can with the mixture. Use a wooden spoon to mix in any of the remaining flour mixture.
5. On waxed paper, shape dough into a 10-inch roll. Wrap and chill for 2 hours or till dough is firm enough to slice.
6. Preheat oven to 350 F.
7. Using a serrated knife, cut roll into 1/4-inch slices.
8. Place slices 2 inches apart on an ungreased cookie sheet.
9. Bake in the oven for 10 minutes or till edges are slightly browned.
10. Once cookies have cooled, spread with the frosting.

Creamy Vanilla Frosting
1. In a small bowl, beat the butter with a wooden spoon till smooth.
2. Gradually add powdered sugar, beating well.
3. Beat in milk. (If necessary, beat in enough additional milk, 1 teaspoon at a time, to make a frosting of spreading consistency).
