Toasty Sausage Surprise

This recipe from “PETA’s Vegan College Cookbook” ended up tasting like a vegan biscuits and gravy. I’ve never really liked biscuits and gravy so I’ll probably not make it again, but this was easy to try. If you happen to have a vegan over to your house for breakfast you may want to take note of this recipe for their sake. Something to note, you don’t need a full two cups of milk for this recipe. I used 1 1/2 and it was even a bit more than I wanted. Give it a try yourself and see what you think.

Toasty Sausage Surprise
1 14oz. tube veggie sausage, crumbled
2 cups soy milk
2 tablespoons vegan butter
salt and pepper, to taste
1/4 cup flour
6 slices bread, toasted

1. Mix together the sausage, soy milk, butter, salt and pepper in a bowl.
2. Heat for 3 minutes, then add a dash of flour while stirring.
3. Heat for an additional 2 minutes.
4. Repeat this flour-adding process until the mixture is thick.
5. Place toast on plates and top with the sausage mixture.
