Here’s another festive gem from my favorite cookbook “The Encyclopedia of Vegetables and Vegetarian Cooking.” This time we’re using our blending and mixing skills to turn 3 simple ingredients: strawberries, mint and champagne, into a tasty trio of quality beverage. This put a lilting step into our late afternoon. We accomplished a lot today and our hard work needed to be celebrated. The next time I make this I’m definitely going to up the mint in this recipe as it was not as present in the taste of the drink as I was hoping. I may even try using some peppermint extract to increase the taste. Be warned, this is a fruity drink but it is not a sweet drink. I was kind of expecting something a lot sweeter than this. If you feel like adding some sweetener to it you might want to do that in the blending phase.
Strawberry and Mint Champagne
1 pound strawberries
6-8 fresh mint leaves
1 bottle champagne or sparkling white wine
1. Puree the strawberries and mint in a food processor or blender.
2. Strain through a fine sieve into a bowl.
3. Half fill a glass with the mixture.
4. Top with champagne.
5. Garnish with a mint leaf.
