Mango-Lime Sorbet

I saw this recipe on the Vegetarian Times website a few weeks ago. Lucky for me, as it has been getting pretty hot down here in Arizona. This stuff was really tasty. We’ve actually made it twice in the past two weeks doing it both this way and also by eating it immediately after blending. It works either way and it is really refreshing for hot summer days.

Mango-Lime Sorbet
4 cups frozen mango chunks
1/2 cup agave nectar
1/4 cup fresh lime juice

1. Thaw mango chunks 15 minutes. Place in blender or food processor, and purée with agave nectar and lime juice.
2. Transfer to shallow glass or metal bowl, and place in freezer.
3. Freeze 30 minutes. Stir purée every 15 minutes until ready to serve.
