Better than Takeout Tofu

This recipe from “PETA’s Vegan College Cookbook” is not going to win any awards for creativity or taste, but it could win an award for a fast and easy lunch. It didn’t taste too bad. In fact, it’s a good basic starter recipe to which you could add your own herbs and spices and whatever else to make it your own. I took the original recipe and made it my own below. I just wish I’d had some scallions to toss on top. I know it’s pretty odd to say, but its taste was oddly reminiscent of chicken noodle soup. I’ll definitely remember this recipe the next time I have plenty of tofu but not much of anything else in the house.

Better than Takeout Tofu
1 16-oz. pack extra firm tofu, drained and cubed
1 tablespoon lemon juice
Bragg’s, to taste
2 teaspoons toasted sesame oil
3-4 tablespoons toasted sesame seeds
1 teaspoon garlic powder

1. Microwave the tofu for 2 minutes.
2. Add the rest of the ingredients, mixing to coat the tofu well.
3. Eat on its own or over rice.
