I tried this recipe over the weekend with the last of our vanilla ice cream while our friend Ramey was visiting from Fairbanks. The good news is that it’s only Wednesday. You have plenty of time to purchase all the ingredients needed to make this before the weekend. The GREAT news is that this tastes more amazing than angel tears! Plus it’s simple. I mean…really? Does life get any better than this? It’s the small things like an amazing, yummy, simple drink recipe for your summer weekend that make life worth living and living WELL. The original recipe is from “Coffee: Scrumptious Drinks and Treats” by Betty Rosbottom. But I’ve made it my own here with a few creative additions, including two ways to make this drink depending on what you want. The original recipe used vanilla ice cream, but I encourage you to try it also with coffee-flavored ice cream. And definitely don’t skip on the garnish of raw sugar and granulated instant coffee. In fact, if you want to spread the rim of the glass with chocolate syrup and coat it with the sugar and instant coffee then go right ahead! It may remind you of this Coffee and Cream Martini recipe which comes from the same book and is equally addictive! The martini recipe has a lot more alcohol in it though, so you need to be prepared for a drink with teeth if you choose that one. This Coffee-Rum Smoothie is much easier to drink and lower in alcoholic content.
1 tablespoon packed light brown sugar
3/4 cup chilled or room temperature brewed coffee
1 cup vanilla or coffee-flavored ice cream
2 tablespoons dark rum
coarsely crush ice
raw sugar, to taste
instant coffee granules
1. Combine the sugar, coffee, ice cream and rum in a blender and blend till smooth.
2. Fill two glasses half full with ice and add half the coffee mixture to each.
3. Sprinkle with raw sugar and instant coffee and serve.
