The Awesome-est Blueberry Muffins

This whole Week of Cookies thing is really Jake’s fault. It’s all because he woke up on a day that hit over 100 degrees and said “I want blueberry muffins! I’m going to make them.” From the moment he switched on the oven it was all over. If I’m going to turn on the oven and heat up the kitchen on a day that’s over 100F then I’m at least going to get multiple cookie recipes out of it. I’ve saved one of the best recipes for last. This recipe for blueberry muffins comes from the genius of The Pioneer Woman Cooks blog. I love this blog. It’s fun and fresh to read and the recipes are just amazing. Apparently this recipe came from a contest she was having. I have to be honest…I did not make the ENTIRE recipe. I skipped the sauce. We are muffin people for sure, but not really sauce-on-our-muffins people. I’ve provided a list of ingredients you’ll need below, but you’ll have to visit The Pioneer Woman Cooks’ recipe page to get the full recipe. We did a few things differently with our muffins, of course. We used frozen blueberries. Frozen Alaskan blueberries that we picked ourselves on a weekend last summer that was pouring down rain. So our muffins are a lovely shade of blue that comes from using frozen berries like ours. We used vanilla yogurt instead of plain. Alaskan blueberries can be quite tart, and though I didn’t want to up the sugar quantity in the recipe, I thought the vanilla yogurt might be a good way to get a bit more sweet in there. Sauce or not, these really were very delicious blueberry muffins.

The Awesome-est Blueberry Muffins
3 cups minus 2 tablespoons flour
1 teaspoon baking soda
2 teaspoons baking powder
heavy pinch of salt
dash of nutmeg
1 cup sugar
1/2 cup vegetable oil
1 egg
1 generous cup vanilla yogurt (extra if wanted)
2 cups fresh blueberries
1 tablespoon vanilla extract
Softened Butter for muffin pans, or use the paper muffin sleeves
raw sugar
