The basics of this recipe came from Betty Rosbottom’s “Coffee: Scrumptious Drinks and Treats” book. However I made a few alterations of my own. I have good news for those of you who want to make this nonalcoholic for the kiddos or anyone else who doesn’t like alcohol: Bailey’s now makes nonalcoholic coffee creamers in various flavors. Feel free to sub in one of these creamers for the alcoholic Bailey’s. You can throw those instant coffee crystals into the blender or sprinkle them on top. You could add a bit of Kahlua to this as well if you’d like. A nonalcoholic version of this will be a great treat for the kiddos once the weather starts getting warmer and you can feel summer around the corner.

2 cups coffee ice cream
2-4 tablespoons Bailey’s
2 tablespoons caramel syrup
